SWEETFOOD: INGREDIENTS AND FOODS TO REDUCE SUGAR CONSUMPTION IN THE POPULATION
DOMCA participates in the SWEETFOOD project within the CIEN R&D&I programme, promoted by CDTI.
The aim of this project is to develop new food products with a drastic reduction in sugar content without affecting the organoleptic and rheological characteristics of the product. The technological innovation involved in the SWEETFOOD project therefore involves identifying the best natural sweetener alternatives and formulating them in a specific way in order to adapt them to the specific characteristics of the food for which they are intended. The processing conditions of the food or beverage, as well as its intrinsic properties, will determine the specific requirements of the sweetener to be used, resulting in a final design. ad hoc for each application.
The consortium is made up of various companies from the food sector such as HELIOS, EUROPASTRY, FRUSELVA, DESTILACIONES BORDAS CHINCHURRETA, INDUSTRIAS ESPADAFOR, HELADOS ESTIU and LACASA and has the collaboration of 4 research centres.
The project is already under development and is expected to be completed by the end of 2021. Its execution will involve an investment of approximately €6M, with the contribution of the European Regional Development Fund (ERDF), in the framework of the Strategic Programme for National Business Research Consortia (CIEN), managed by the Centre for Technological and Industrial Development (CDTI).
