DERPLAST

DERPLAST is a food-grade plastic coating intended for external treatment during the cheese ripening process.

The coating of a cheese plays an important role in the curing process. Apart from offering important protection against proliferation of yeasts and moulds, the type of coating determines several factors of the final product, appearance, flavour, texture and consistency. It also represents a barrier function against water loss, preventing loss of product shape, degradation and/or texture damages during slicing.

The coating also acts as an element of physical protection of the cheese against possible damage that may occur during handling. A good coating can prevent cheese cracking, loss of shape and even deformation during cutting processes, major issues that affect product quality and may cause costumer´s rejection. In addition, choosing a proper coating enables product manufacturing´s standardization and homogenization.

DERPLAST is intended to increase shelf life. DERPLAST allows greater efficiency in drying time, reduces damage during transport, allows optimal cutting and avoids coating dragging from the cheese surface to the inside.

READOM E PRO

Plastic coating that acts as a physical barrier against preventing water loss, maintaining the shape and offering great protection against yeasts and moulds. The chosen type of coating shapes the appearance of the product from ripening to consumption. It also avoids deformation and cracking during handling, maintains texture and consistency until slicing and provides a natural, handcrafted appearance.

Procoat is a food-grade plastic coating for the external treatment of cheese during the ripening process. Its innovative polyvinyl compounds act as elements of physical and microbiological protection barrier of the cheese. In addition, it increases product shelf life ,it allows drying time reduction, and it enables an optimal cut process by avoiding dragging of the coating towards the center of the cheese. It also generates humidity resistance and allows perfect vacuum packaging.
This product stands out for being easy to clean and provides natural and handcrafted appearance of the final product.

Edible coating without added preservatives. It is based on an emulsion of food-grade polysaccharides with protection barrier properties that extends shelf life.

POWDER COATING 

It is a food grade, edible and powder-form coating especially intended for cured cheeses. It is a coating for cheese surface treatment during ripening processes. It forms a protective film. Proallium Salmueras

DOMCA offers natural solutions to extend the shelf life and improve the quality of brines in the dairy industry.
Proallium Salmueras is a product made from natural plant extracts that allows microbiological control of the brine. Effective against moulds, yeasts and bacteria. Its broad antimicrobial spectrum prevents brine contamination, reducing the risk of contamination on the surface of the cheese and increasing the shelf life of the brine.

AROMAS

DOMCA offers aromas that enhance distinctive flavour of cheeses. Lacto 100 Aroma de Oveja DMC and Lacto 100 Aroma de Cabra DMC are enzymatically obtained from sheep and goat milk. Flavour that boost cheese aroma achieving the desired cured cheese bouquet. Both aromas are moisture-free, present improved texture and contains no off-notes. Intended to enhance and/or reinforce natural cheese aroma.
